Patch Recipes: Full Meal for Memorial Day

Eat some good stuff on Monday and remember to honor those who have died for our country.

Memorial Day is the unofficial start of summer. It is a day for spending time with family and friends, eating lots of food and (most importantly) to honor those who have died fighting for the United States of America and our freedom.

While hot dogs and hamburgers are the most popular items to eat on Memorial Day, there are other things you can make. Here is the guide to creating a full meal for the big day, courtesy of Attleboro resident Laurie Brasil.

Wine Cooler

Ingredients

  • 1 Bottle white wine
  • 3 cups orange juice
  • 1 cup unsweetened pineapple juice
  • 2 cans of lemon-lime soda

Directions

Combine all ingredients except for soda, mix well. Just before serving, slowly add soda. Serve over crushed or cubed ice.

Harvest Squares

Ingredients

  • 2 cans refrigerated crescent dinner rolls
  • 8 oz pkg. cream cheese, softened
  • 1/2 cup sour cream
  • 1 teaspoon dill weed
  • 1/8 teaspoon garlic powder
  • 20 small broccoli florets
  • 20 cucumber or zucchini slices
  • 10 cherry tomatoes
  • Fresh parsley, if desired

Directions

Heat oven to 375 degrees. Separate dough into four long rectangles. Place rectangles on cookie sheet, firmly press perforations to seal. Bake for 13 to 17 minutes or until golden brown. Cool completely. In small bowl, combine cream cheese, sour cream, dill weed and garlic powder; blend until smooth. Spread evenly over cooled crust. Cover; refrigerate for one to two hours. Before serving, cut into squares. Garnish with broccoli, cucumber, tomato and parsley.

Potato Salad

Ingredients

  • 6 medium potatoes, cooked, peeled and cubed
  • 1 small onion, chopped
  • 1 small green pepper, chopped
  • 1/2 pkg of bacon, cooked and chopped
  • 1 1/4 cup mayonnaise
  • Salt & pepper to taste

Directions

Combine all ingredients, mix well. Refrigerate until serving.

Stuffed Shells with a Twist

Ingredients

  • 1 pkg med pasta shells. cooked and cooled
  • 3 cups chopped, cooked chicken
  • 2 stalks celery, chopped
  • 1/2 pkg bacon, cooked and chopped
  • 1/4 teaspoon salt
  • 3/4 cup mayonnaise
  • 2 tablespoons lemon juice
  • 2 tablespoons parsley, chopped

Directions

Combine all ingredients, mix well. Stuff pasta shells with chicken salad. Sprinkle parsley over top. Refrigerate until served.

Baked Apples with Vanilla Ice Cream

  • 6 large baking apples
  • 2 tablespoons lemon juice
  • 1/2 cup raisins
  • 1/2 teaspoon cinnamon
  • 1 cup maple syrup
  • 1/4 cup water

Heat oven to 350 degrees. Core apples and cut a one-inch strip of peel around top to prevent splitting. Brush tops and insides with lemon juice. Place apples in eight-inch square baking dish. In small bowl, combine raisins and cinnamon; fill center of each apple with mixture. Pour maple syrup over apples. Add 1/4 cup water to baking dish. Bake at 350 degrees for 45 to 50 minutes or until apples are tender, spooning syrup mixture over apples occasionally. Serve warm with a scoop of vanilla ice cream.
