Patch Recipes: Fun Food for Easter

The whole family, even the children, can participate in making these holiday treats.

This Sunday is Easter, a Christian holiday celebrating the resurrection of Jesus Christ. But it is also a family day with egg hunts, nice outfits, chocolate bunnies and good food. 

Here are some Easter recipes that are not too complicated and/or fun, so everybody can contribute—even the children. Enjoy!

Bunny Cake (Lawrenceville Patch)

Ingredients

  • 1 box of yellow cake mix (water, eggs, oil)
  • 1 container of white frosting
  • 2 cups of shredded coconut
  • Jelly beans
  • Green food coloring
  • Colored construction paper

Directions

Heat oven to 350 degrees (325 for dark pans). Bake and cool cake as directed on the box for two 9-inch round pans.

Using one of the cake layers, cut in half down center of cake. Put the halves together with frosting, flat side down, to form the body of the bunny.

Cut out a notch about a third of the way up one end of the body in the front to form a small head. Use one half of the notched out piece of cake to make the bunny’s tail. Attach with frosting. 

Frost the rest of the cake, rounding out the body on the sides. Sprinkle with one cup of coconut, to make the cake look like it has fur. Cut ears from construction paper, and press into the notched out area on top of the bunny's head. Use jelly beans for eyes and nose.

Mix one cup of coconut, with three drops of food color in a bowl until evenly tinted. Surround bunny with coconut "grass." Garnish with additional jelly beans.

Easter Bunny Bait (Dacula Patch)

Ingredients

  • 1 bag popped microwave popcorn
  • 1 11-ounce package of white chocolate chips 
  • 1 bag of Easter M&Ms (can be any variety)
  • Pretzel sticks broken into half-inch pieces
  • Sprinkles
  • Food coloring if desired

Directions

Spread the popcorn and pretzel pieces out in a jelly roll pan or on parchment paper. Melt the chocolate chips according to package directions.

Add food coloring to the melted chocolate if desired. Pour the melted chocolate over the popcorn and pretzel bits. Add sprinkles, but do not stir 

After the chocolate hardens, break the popcorn/pretzel mixture into smaller pieces and toss with M&Ms.

Deviled Eggs  (Princeton Patch)

Ingredients

  • 6 hard boiled eggs
  • 3 tablespoons mayonnaise
  • 1/2 teaspoon dry mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • paprika to garnish 

Directions

Cut peeled eggs lengthwise into halves. Take out yolks and mash with fork in a small bowl. Add mayonnaise, mustard, salt and pepper. Mix up well

Fill up whites of egg with mixture. It should stick up like a mound in egg white. Arrange on a large serving plate. Sprinkle tops with paprika. Refrigerate for up to 24 hours and enjoy when ready.
